A gougère, in French cuisine, is a baked savory choux pastry made of choux dough mixed with cheese. If you don’t know what to do for your December 31st appetizer, try these fabulous gougères!

Baking Time: 20-25 mintues at 400°F (200°C)
Difficulty: medium
Yield: approx. 50 gougères
1. Preheat the oven at 400°F (200°C).
2. Put the water, milk, butter and salt in a saucepan and bring to a boil.
3. Once boiling, remove the pan from the heat immediately and pour in the flour all at once. Mix vigorously with a spatula.
4. Return to low heat and dry the dough, stirring vigorously with the spatula, for 1 minute.
5. When the dough comes away from the bottom of the pan, let it cool down a little bit.
6. Beat the eggs in a bowl. Add a portion of eggs to the dough, mixing energetically. Proceed the same way, by portions, until you have no egg left.
7. Add 3/4 of Gruyère to the choux pastry, season with nutmeg and pepper.
8. Put the dough in a pastry bag and form choux on a lined baking tray, leaving enough space between each chou.
9. Sprinkle the choux with the remaining cheese.
10. Add a little Espelette pepper, if desired.
11. Bake for 20-25 minutes. As soon as baking is done, remove the Gougères from the oven and serve warm.
