This recipe basically consists of making a pie with ham, but with a brioche dough, which is delicious !

1. Start by preparing the dough: mix all the ingredients until a soft dough is obtained. Cover and let rise at room temperature until the dough doubles in volume (about 1h30).
2. Prepare the filling by mixing all the ingredients, season.
3. Lower the dough on a little flour into a rectangle.
4. Brush with mustard but don’t cover the edges.
5. Spread the filling.
6. Roll each side toward center, lengthwise.
7. Place in parchment-lined pan.
8. Allow approx. 30 minutes to rest.
9. Brush with a yolk.
10. Bake 55-60 minutes in the lower part of the oven preheated to 355° F (180° C).
11. Serve hot or cold, sliced, with a salad for example.
