Ingredients
- 10 tablespoons of Philadelphia cheese (400 g)
- 2 1/2 tablespoons of plain yogurt (100 g)
- 2 eggs
- 1/3 cup + 1 tablespoon of granulated sugar (80 g)
- 1 or 2 limes, zest and juice
Instructions
1. Preheat the oven to 320° F (160° C).
2. Grate the lime(s) to recover the zest, then squeeze it or them to obtain 1/3 cup.
3. In a bowl, beat the plain yogurt to loosen it.
4. Stir in sugar, zest, lime juice and Philadelphia cheese and mix well.
5. Add the eggs and mix.
6. Fill the muffin molds to the edge (otherwise the mini-muffins will collapse while cooling).
7. Bake for about 10 minutes. Then turn off the oven and leave the mini-muffins for 30 minutes with the door closed.
8. Remove the mini-muffins and let them cool completely. Put them in the refrigerator for a few hours (ideally one night).
9. To decorate, whisk a bit of whipped cream and stir in some icing sugar and lime zest !
