This quiche is simply amazing: it is light (or it seems light) and has a delicious taste!

Baking Time: 35-40 minutes at 355° F (180° C)

Ingredients
For the dough
- 1 cup + 1 tablespoon of all-purpose flour (150 g)
- 2 tablespoons of melted butter (35 g)
- 1/4 cup of milk (0.5 dl)
- 1 teaspoon of salt + pepper
For the topping
- 4 oz of smoked salmon, cut in thin slices (150 g)
- 6 mini babybel, cut in small pieces
- 3 eggs
- 1 tablespoon of tarragon
- 2/3 cup of grated Gruyère (70 g)
- 3/4 cup of whipped cream 2 dl)
- 1 tablespoon of mustard
Instructions
1. Preheat the oven to 355° F (180° C). Mix all ingredients until you get a dough.
2. In a medium bowl, mix eggs, salt and pepper, mustard and whipped cream.
3. Add tarragon, Gruyère, babybel and smoked salmon.
4. Spread the dough into the mold and prick it with a fork.
5. Pour the mixture into the mold.
6. Cook for about 35-40 minutes.
