Stuffed Piquillos! In Spain, they’re called “Pimientos Rellenos”, but here’s a cold version that’s ideal for quick and easy aperitifs!

Yield: 8 to 9 stuffed piquillos
Ingredients
- 8-9 piquillos (1 jar)
- 120g ricotta cheese
- salt/pepper
- chives
Instructions
Empty the liquid from the jar. Spread the piquillos on a cutting board or platter.
Combine ricotta, salt and chives. Whisk well. Garnish each piquillo.
Serve immediately.
