This traditional French dessert, called “Flognarde” is typical of the Limousin, Auvergne and Périgord regions. It’s a kind of apple-flavored flan with a pastry similar to clafoutis.
In Old French, the word “Fleugne” or “fleunhe” means “soft” or “sweet”. This gives you an idea of the texture of this traditional apple flan.

Ingredients
- 3 medium-sized apples
- 3 large eggs
- 3/4 cup flour (100 g)
- 1/3 cup + 2 tablespoons sugar (100 g)
- 2 cups milk (50 cl)
- ½ vanilla pod
- 3 tablespoons melted butter (40 g)
Instructions
Preheat oven to 350°F (180°C).
Peel the apples, remove the core and cut the flesh into thin strips.
Whisk together eggs and sugar until pale. Add flour and mix well.
Cut vanilla pod lengthwise. Heat the milk in a saucepan with the split vanilla pod. Leave to infuse for 2 minutes, then add the butter to melt.
Remove the vanilla pod and gradually pour the mixture over the eggs, stirring constantly.
Pour half the batter into a 8-9 inches (20-24 cm) diameter mould.
Place the apples on top, then pour in the rest of the batter.
Bake for 40 minutes at 350°F (180°C).
