These delicious lemon cookies are covered with lemon glaze. They melt in your mouth and easy to make!

Ingredients
For the cookie dough
- 1 cup + 2 tablespoons of butter, softened
- 2 cups + 2 tablespoons of granulated sugar
- 1 pinch of salt
- 1 lemon
- 3 3/4 cups + 3 tablespoons of all purpose flour
For the glaze
- 3/4 cup of icing sugar
- 3 tablespoons of lemon juice
Instructions
1. Mix the butter, sugar and salt in the mixer bowl.
2. Stir in eggs and mix until whitened.
3. Grate the zest of the lemon and add to the mass. Add the flour and stir. It is recommended to put the dough in the fridge for 2 hours.
4. Preheat the oven to 400°F.
5. Spread a portion of dough on the slightly floured worktop about 0.15 inch (4mm) thick. Cut out shapes with a cookie cutter.
6. Place the cookies on a tray lined with baking paper. Recover the drops and incorporate them into a new serving of dough.
7. Bake for10 minutes.
8. Immediately prepare the glaze and spread with the brush on the cookies as soon as they’re out of the oven.
