Here’s a simple recipe for a starter: green bean purée with lemon zest.
It can be served with bread or crackers, or any other accompaniment of your choice!

Ingredients
For the edamame purée
- 10.5 oz edamame, shelled and peeled (300 g)
- 1 fresh onion
- 1/3 cup + 2 tbs water (1 dl)
- 2 cloves garlic
- 1/2 tsp cumin seeds
- 1/3 cup olive oil (8 cl)
- 2 tbsp. lemon juice
- 1/2 tsp. salt
For the garnish
- 1/2 lemon
- 1/2 bunch flat-leaf parsley
- 4 sprigs dill
- 2 sprigs mint
- olive oil
Instructions
Bring a large volume of salted water to the boil and blanch the edamame for 2-3 minutes. Drain.
Finely chop the fresh onion, sauté in a pan with a little olive oil and the beans, then add the water and cook over low heat until the beans are tender, about 8-10 minutes. Remove from heat and allow to cool.
Crush the garlic cloves with the salt and cumin in a mortar and pestle. Place the edamame, crushed garlic, lemon juice and olive oil in a blender and blend more or less finely, depending on whether you prefer a very smooth or chunky purée. Adjust the seasoning.
Arrange in a serving dish and add lemon zest, chopped herbs and a drizzle of olive oil. Serve chilled.
