Ingredients
- 4 chicken breasts
- 2 onions
- 2 tablespoons of tomato paste
- 1/2 cup of cashew nuts (50 g)
- 2 cloves garlic
- 1/4 of lemon
- 1 tablespoon of plain yogurt
- 2 tablespoons of oil
- 2 teaspoons of red curry paste
- 1/2 teaspoon of turmeric
- 1 1/4 cup of water (3 dl)
Instructions
1. Cut the onions into quarters and the cloves in half.
2. Put the tomato paste, cashews, red curry paste, garlic, onions, turmeric, and yogurt in the blender. Squeeze the 1/4 lemon and mix until the mixture is relatively smooth.
3. Cut the chicken breasts into pieces. In a casserole dish, brown the chicken with a drizzle of oil.
4. Once the chicken is golden-brown, add the previous preparation and water. Mix well and cook over low heat for 10 to 15 minutes, depending on the consistency of the sauce, which must be fairly thick.
5. Serve with rice.
