Here is a new recipe for Christmas cookies: chocolate-cinnamon stars.

Yield: approx. 25 cookies
Ingredients
For the dough
- 2/3 cup of chocolate chips (100 g)
- 3/4 cup + 2 tablespoons of granulated sugar (200 g)
- 2 1/4 cups of ground almonds (250 g)
- 4 tablespoons of all-purpose flour
- 1 tablespoon of cinnamon
- 2 egg whites
- 1 pinch of salt
For the icing
- 1 1/4 cup of icing sugar (200 g)
- 1 egg white
Instructions
Melt the chocolate (microwave or bain-marie).
In a bowl, mix sugar, almonds, flour and cinnamon.
Beat the egg whites with the salt until stiff.
Gently stir in the melted chocolate and egg whites in the previous mixture.
Roll out the dough into portions on a work surface (with sugar on it) and about 0.40 inch (1 cm) thick.
Cut stars with a cookie cutter, dipping it regularly in sugar.
Place the stars on a baking sheet.
Allow to dry 6 hours or overnight at room temperature.
Preheat the oven at 400°F (200°C). Bake for 4 minutes.
Prepare the icing by mixing the icing sugar and egg white.
Put the icing in a piping bag and draw lines on the cooled stars.
Allow to dry before eating.
