A financier is a small French almond cake, flavored with “beurre noisette”, usually baked in a small mold. Light and moist with a crisp, eggshell-like exterior, the traditional financier also contains egg whites, flour, and sugar. This simple recipe comes from a famous French Chef.

Ingredients
- 6 egg whites
- 2/3 cup + 4 tablespoons of butter (200 g)
- 1 1/4 + 1 tablespoon of icing sugar (200 g)
- 3/4 cup of almond powder (80 g)
- 1/2 cup + 1 teaspoon of all-purpose flour (80 g)
Instructions
1. Preheat the oven at 350°F (180°C).
2. In a large bottom pan, melt the butter over medium heat. It will take a nice hazel color.
3. In the robot’s bowl, froth the egg whites. Then add the icing sugar, then mix gently.
4. Stir in the flour and almond powder and mix.
5. Add the still warm hazelnut butter, filtering it, and whisk until a homogeneous mixture is obtained.
6. Spread in the previously buttered or lined molds.
7. Bake for about 15 minutes.
