Delicious chocolate chip cookies? Ok, it’s not revolutionary… but when they’re flavoured with coffee, it changes everything!

Ingredients
- 1 3/4 cup of all-purpose flour (250 g)
- 1 cold espresso
- 3/4 teaspoon of salt
- 1/2 teaspoon of baking powder
- 12 tablespoons of unsalted butter, room temperature (170 g)
- 1 1/4 cups of brown sugar (213 g)
- 1 large egg
- 4 ounces of bittersweet or semisweet chocolate, chopped into bite-sized pieces (113 g)
Instructions
- Preheat the oven to 350°F (180°C).
- In a medium bowl, whisk together the flour, salt, and baking powder.
- In the bowl of a stand mixer fitted with a paddle, beat the butter at medium speed until creamy, about 1 minute. Add the sugar, and beat until fluffy, 2 to 3 minutes. With the mixer on low, add the cold espresso and egg, beating to combine.
- Add the flour, and beat on low until combined. Add the chocolate chips, and stir to combine. Shape the dough into 3 ounce balls (85 g). Place balls an equal distance apart on the prepared pan.
- Bake 15 minutes, until the cookies are puffed slightly in the center. Eat these delicious cookies warm or cold!
