Ingredients
- 1 tbsp. olive oil
- 5 scallions with tops, finely chopped, reserve 1 tbsp.
- 2 tbsp. flour
- 5 oz white wine (1.5 dl)
- 27 oz vegetable stock (8 dl)
- 3.3 oz heavy cream (1 dl)
- salt and pepper to taste
- croutons (optional)
Instructions
Heat the oil in a saucepan. Sauté scallions for 3 minutes, sprinkle with flour and cook briefly.
Add the wine and reduce almost completely.
Add stock and bring to the boil.
Reduce heat, cover and simmer for 10 minutes.
Add cream, blend and season.
Garnish with reserved scallions and croutons if desired.
