How about a good quiche for your lunch or dinner? This recipe combines a good homemade shortcrust pastry, leeks and ham! Delicious!

First prepare the filling: wash the leek whites and cut them into slices.
Melt the butter in a deep frying pan or large saucepan and add the leek slices.
Sweat for 5 minutes, then add the broth and cook for 30 minutes or until the broth evaporates.
Meanwhile, cut the ham into thin strips.
In a bowl, beat the eggs into an omelette, then add the cream, ham, salt and pepper and mix. Set aside.
Prepare the dough: mix all the ingredients in the bowl of a food processor until you obtain a homogeneous dough. Roll out on a floured work surface, then place in the baking pan lined with baking paper. Prick with a fork.
Preheat oven to 350°F (180°C).
Spread the leeks.
Pour the mixture on top.
Then sprinkle with grated cheese.
Bake for about 30 minutes.
This quiche can be eaten hot, warm or cold!
