A yogurt cake that has many advantages: it is prepared in 15 minutes, it is light, it is delicious and it goes well with compote, red fruits or ice cream!

For: a 9-inch round mold (24 cm)
Ingredients
- 3 eggs
- 1 1/4 cup brown sugar (213 g)
- 1 cup + 2 tbsp. butter, melted and slightly cooled
- 9 oz plain yogurt (room temperature – 250 g)
- 1 tbsp. vanilla essence
- 2 cups + 2 tbsp. all-purpose flour (300 g)
- 1 tsp. baking powder
- powdered sugar for sprinkling
Instructions
1. Preheat oven to 400°F (200°C).
2. In the bowl of a food processor, mix the eggs and sugar at high speed until they are white, about 2 minutes.
3. Add butter, yogurt and vanilla extract and mix for 1 minute on medium speed.
4. In a bowl, combine the flour and baking powder, then add to the mixture and mix.
5. Pour the dough into a buttered and floured mold or into a silicone mold.
6. Bake for 25 to 30 minutes. Check with a knife.
7. Unmold, sprinkle with powdered sugar and enjoy.
