Everybody loves muffins! They are easy to make, easier to eat, and they fit perfectly in every bag for your 10 o’clock break! This recipe is yummy, as it mixes lemon with a touch of cinnamon! Try it, you’ll love it!
Prep Time: 10 minutes
Baking Time: 15 minutes at 400° F
Difficulty: easy
Yield: 12 muffins
Ingredients
- 3/4 cup of milk
- 1/3 cup of vegetable oil
- 1/2 cup of sugar
- 2 teaspoons of lemon zest
- 2 eggs
- 2 cups of all-purpose flour
- 2 1/2 teaspoons of baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon of ground cinnamon
For the frosting (my very own personal trick)
- 2 tablespoons of icing sugar
- 1 teaspoon of lemon juice
Instructions
1. Heat oven to 400° F.
2. Line muffin cups with paper baking cups.
3. In large bowl, beat milk, oil, sugar, lemon zest and eggs with wire whisk.
4. Stir in remaining ingredients just until flour is moistened.
5. Divid batter evenly among muffin cups.
6. Bake 15 minutes or until toothpick inserted in center comes out clean.
7. Immediately remove from pan.
8. Stir together icing sugar and lemon juice and spread it over the muffins.
