It’s pumpkin season! They can be prepared in a variety of ways, both sweet and savoury. I suggest combining pumpkin with potatoes to make delicious homemade gnocchi!
Prep Time: 30 minutes
Cooking Time: 30 minutes
Difficulty: easy
Yield: 24 gnocchi
For the gnocchi
For the sauce
Add mashed potato, pumpkin purée, and salt into a large mixing bowl. Mix until combined. Add about 1 cup flour (add more if needed). The dough will still be slightly tacky.
Spread large work surface with extra flour. Divide the dough into 24 portions. Roll each one between your hands to form a ball.
Using a long piece of cooking string, gently score the ball into pumpkin shape.
Add a thyme branch for the decoration.
Bring a saucepan of salted water to a rolling boil. Add the gnocchi and cook until they float to the surface.
Meanwhile, prepare the sauce. Heat the cream in a pan and add the garlic powder, onion powder and salt.
Add the gnocchi to another pan making sure it is on a single layer so that each one touches the hot pan. Leave it to cook for about 2 minutes or until golden brown and crispy.
Once the gnocchi are crispy, spoon the sauce into soup plates, then arrange the gnocchi on top.
