Ingredients
For the sauce
- 4 tablespoons of cider vinegar
- 3 tablespoons of olive oil
- salt and pepper to taste
For the salad
- 3/4 cup of quinoa (150 g)
- 1 lb of green asparagus, cut in chunks of about 1 inch (2.5 cm) (500 g)
- 1/2 lb of strawberries, cut in slices (250 g)
Instructions
- For the sauce: mix the vinegar and oil in a salad bowl, season with salt and pepper.
- Cook the quinoa according to the instructions on the package. Allow to cool.
- Heat a pot of water and cook the asparagus for 5 minutes. Empty the water and let it cool.
- Add quinoa to the salad dressing, mix.
- Stir in asparagus and strawberries and serve immediately.
