Ingredients
For the salmon
- 1 tbsp. olive oil
- 1 pinch salt
- 4 salmon steaks
For the salad
- 1 lime, rinsed in hot water and dried, grated rind and juice
- 1 pinch salt
- 14 oz celery stalks, thinly sliced (400 g)
- 21 oz cherries, halved, pitted (600 g)
- 2.4 oz hazelnuts, coarsely chopped (70 g)
- 1 tbsp. parsley
Instructions
Heat a little oil in a non-stick frying pan and brown the salmon for 4 minutes on each side.
Meanwhile, wash the celery and cut into thin slices. Pour into a salad bowl.
Add the cherries and hazelnuts.
Coarsely crumble the salmon with a fork and add to the bowl.
Add lime zest, salt and parsley and mix well.
Add the lime juice and mix briefly.
Serve immediately.
