Every year, on December 6th, it is the feast of St. Nicholas, on the occasion of which little figures are made out of brioche dough.
For the record, St. Nicholas’ Day is a feast featuring Nicholas of Myre, known as St. Nicholas, rewarding the good behavior of children.
This year, a giant format has been preferred, but you can quite easily make several brioches by dividing the dough accordingly.
Prep Time: 30 minutes
Rest Time: 3 hours
Baking Time: 15 minutes at 350°F (180°C)
Difficulty: easy
Yield: 1 giant brioche (2 medium or 4 small)
In the food processor bowl, mix all the ingredients of the dough, making sure that salt and yeast are not in direct contact. Mix for a good ten minutes. Cover and let stand for 2 hours.
Form one or more figures according to your mood of the day!
First form the body, then the head, and then add a hat, scarf, arms, nose, etc. Cut the body to form legs and place gently on a baking sheet lined with baking paper.
Cover and let stand for 1 hour.
Preheat the oven to 350°F (180°C). Brush the figure(s) with egg yolk, then garnish with granulated sugar and chocolate chips to form eyes.
Bake for about 15 minutes.
