Start by preparing the pizza dough: in the bowl of a food processor, pour all the ingredients for the pizza dough, making sure that the yeast and salt are not in direct contact. Knead for 10 minutes until you have a smooth dough. Form into a ball, cover and let rest for 1-2 hours.
Preheat oven to 430°F (220°C).
Prepare the balls: roll out the dough on a floured work surface and cut into 24 squares.
Spread tomato sauce in the center of the squares. Add mozzarella and basil.
Close the dough squares to create balls. Assemble them on a baking sheet lined with baking paper to form a tree: the first row should have 6 balls (there will be 1 ball too many).
Beat the egg with a little water and brush the top of the balls.
Bake for 15-20 minutes.
Melt the butter before mixing it with the parmesan and basil.
Spread this mixture on the tree balls as soon as they come out of the oven!
