Carnival season is in full swing. Fat Tuesday is tomorrow, so to celebrate this day with greed, try the “Cuisses-de-Dames”.
This is a small fried pastry, slightly elongated in shape, vaguely reminiscent, as its name suggests in French, of a woman’s thigh. Try this lower-fat version, with air-fryer baking!
Prep Time: 45 minutes
Baking Time: 8 minutes at 400°F (200°C)
Difficulty: easy
Yield: 40 pieces
In a bowl, mix the butter, sugar and salt. Stir in the eggs one by one and mix until the mixture turns white. Stir in the orange zest. Add the flour mixed with the baking powder and work gently into a soft dough. Cover and chill for about 1 hour.
On a little floured surface, shape the dough into rolls of about 0.80 inch (2 cm) Ø each, cut them diagonally into sections of about 1,20 inch (3 cm).
Preheat the air-fryer at 400°F (200°C).
Spray the bottom of the air-fryer with oil. Cook, by portions, 4 minutes on each side.
Let it cool down and sprinkle with some icing sugar.
If you prefer deep-frying: fill a casserole one-third full of oil and heat it to about 320°F (160 °C). Dip the Cuisses-de-Dames into the oil in portions using a slotted spoon and fry them for about 2 minutes, turning them over from time to time. Remove, drain on kitchen paper, sprinkle with icing sugar and leave to cool on a wire rack.
Good to know: Cuisses-de-Dames are fragile pastries that don’t last long. To be eaten the same day!
