You’ve probably already seen these Japanese lunch boxes, called Bento, which consist of several different dishes, beautifully presented, and which make up a healthy and balanced dish. Here is a version with Cantonese rice and Japanese omelette.

Yield: 4 persons
For 1 Japanese omelette (for 4 persons, you have to make 2 omelettes)
For the Cantonese rice
For the Japanese omelette
1. In a bowl, beat the eggs with a fork with broth and salt.
2. Heat 1 drizzle of oil in a pan, then pour a small amount of beaten egg, to form a thin “crêpe”.
3. Roll the “crêpe” to the edge opposite the pan.
4. Pour a small amount of beaten egg again.
5. Let cook, then slightly lift the rolled “crêpe” previously, to pass a little egg underneath.
6. Let cook a little, then roll this new “crêpe” to the opposite edge.
7. Renew until the beaten egg is used up.
8. Brown the omelette on all sides over medium heat.
9. Then cut the omelette into slices to garnish the bento.
For Cantonese rice
10. Cook the rice.
11. In a bowl, beat the eggs with a fork.
12. In a wok, heat a drizzle of olive oil, fry the egg. Add ham and peas and continue to fry.
13. Add the rice and mix. Add soy sauce according to your taste.
14. Just fill your Bento boxes!
