Here is a great summer dessert recipe with blackberries! Panna cotta is a very interesting dessert, because it can be accompanied by all sorts of coulis and thus vary the tastes and pleasures. Here, it is a coulis both fruity and flowery which is proposed to you, because the blackberries are sublimated by elderberry!

For the panna cotta
For the coulis
Start by preparing the panna cotta: in a saucepan, whip energetically the cream, milk, sugar, vanilla and agar-agar. Heat over low heat. Remove from heat as soon as the mixture boils, then let cool.
Divide the cream into individual ramekins and chill for at least 4 hours, preferably overnight.
Then prepare the coulis: heat the fruit with the syrup and water in a saucepan. Let it cook for a few minutes. Remove from heat and let cool.
Blend the preparation finely and add the lemon juice. To obtain a very smooth coulis, simply strain through a fine sieve.
To serve, unmold the panna cotta and serve with the coulis. Add a few extra fresh blackberries for decoration!
