The barbecue season is not over yet! I suggest you make pork skewers, which rest in a Thai marinade for several hours. You can accompany them with the side dishes of your choice, salad, rice, chips, etc.

Rest Time: 2-3 hours

Yield: 6-8 skewers
Ingredients
- 17.6 oz pork loin or pork tenderloin, sliced into cubes (500 g)
- 3-4 cloves of garlic, crushed
- 1 Tbsp. grated ginger, crushed
- 2 Tbsp. of coriander leaves, chopped finely
- 1 Tbsp. cracked pepper
- 1 small red chilli, chopped
- 2 Tsp. light soy sauce
Instructions
Add all ingredients into a mixing bowl. Add the pork and mix well, coating the meat completely. Leave in the fridge to marinate for 2-3 hours.
Using a skewer, poke through the pork and continue doing so until the skewer is almost full (leaving a small amount of space at the bottom for holding). Do the same for the other pieces of meat.
Grill the skewers in a pan or on the barbecue until brown all over.
