Here’s a delicious recipe for a carrot soup with a drizzle of tahini sauce to detoxify at the beginning of the year.
The tahini, tahin, tahina, tehina or tahine, is a sesame cream, made from crushed sesame seeds, with a little water, until a smooth paste is obtained. Tahini is very rich in calcium and phosphorus.

Ingredients
For the carrot soup
- 1 onion, chopped
- 2 tablespoons of olive oil
- 4 carrots, peeled and sliced
- 1 potato, peeled and sliced
- 6 cups of chicken broth (1.5 l)
- 1/2 teaspoon of ground cumin
For the Tahini soup
- 2 tablespoons of water
- 2 tablespoons of tahini
- 1 teaspoon of honey
- 1 teaspoon of lemon juice
- 1 green onion, for decoration, only the green part thinely sliced
- 1 tablespoon of sesame seeds
Instructions
Start by preparing the carrot soup: in a large saucepan, soften the onion in oil. Add the carrots, potato, broth and cumin. Bring to the boil. Cover and simmer for 30 minutes or until vegetables are tender.
Meanwhile, prepare the Tahini sauce by mixing all the ingredients in a bowl. Set aside.
Blend the soup and adjust the seasoning if necessary.
Divide the soup among the bowls.
Garnish with green onion, sesame seeds and a drizzle of Tahini sauce.
