A very simple and healthy recipe combining chicken, coconut milk, snow peas and red curry paste.
You can make it more or less spicy by adding a little more or less red curry paste than indicated in the recipe.
And for a little variety, replace the snow peas with carrots, broccoli, beans or any other vegetable you like!

Ingredients
- a little sunflower oil
- 1 lb chicken, cut into strips (450 g)
- 2 cloves garlic, finely chopped
- 2 tbsp. red curry paste
- 1 cup coconut milk (2 1/2 dl)
- 3/4 cup + 2 tablespoons water (2 dl)
- 1 tablespoon brown sugar
- 3 tablespoons fish sauce
- 1 teaspoon turmeric
- 7 oz snow peas (200 g)
- salt
- 7 oz rice (200 g)
Instructions
Fry the garlic in a wok or large pan with oil.
Add chicken strips and sauté for 3 minutes.
Add curry paste and sauté briefly.
Stir coconut milk and water well, add, bring to a boil, lower heat.
Add raw sugar, fish sauce and turmeric, mix.
Add snow peas and let cook uncovered for about 15 minutes, keeping them crisp.
Meanwhile, cook the rice.
Place the rice on the plates and pour the curry over it.
