This is a great summer recipe, to be eaten hot, warm or cold, as you like! These patties are made with chicken, feta and courgettes and are a real treat!

Ingredients
- 2 medium zucchini
- 1 medium carrot
- a few sprigs of chives
- 1/2 lb cooked chicken meat (225g)
- 3/4 cup feta cheese (80g)
- 1 egg
- a dozen almonds or hazelnuts (optional)
Instructions
Wash the zucchini and peel the carrot.
Grate the zucchini and carrot with a grater.
Heat a pan with a little olive oil. Add the zucchini and carrot. Season with salt.
Cook over high heat for about 12 minutes, until lightly colored and the water in the vegetables has evaporated.
Remove from heat and add chopped basil. Let cool.
Mix the chicken with the grated vegetables and crumbled feta.
Add a lightly beaten egg and some crushed almonds or hazelnuts.
Mix well.
The preparation is quite soft, if it is too difficult to form patties, add some breadcrumbs.
Form into balls, then flatten.
Heat a pan with a little olive oil. Cook the patties on each side until they are golden brown.
Turn them over gently. Enjoy whenever you like!
