Doughnuts for February? What a great idea!
I suggest you make delicious doughnuts , filled with whipped cream, but you can also vary the pleasures by adding jam, hazelnut spread or custard!
They’re cooked in an air-fryer, but I’ll also explain how to fry them – the choice is yours!

Start by preparing the dough for the doughnuts: In the bowl of a food processor, combine all the ingredients, making sure that the salt and yeast are not in direct contact. Knead until the dough is smooth. Place in a lightly oiled bowl. Cover with cling film and leave to double in size for 1 h.
On a floured work surface, separate the dough in half. Roll out one dough at a time to a thickness of 1/4 inch (6 to 8 mm).
Cut out doughnuts using a 3″ (7.5 cm) round cookie cutter.
Reuse dough scraps to form new doughnuts.
Cover with a dry cloth and leave to double in size for 30 to 45 minutes.
Next, prepare the whipped cream: In a bowl, whip the cream with the sugar until it forms stiff peaks. Set aside in the fridge.
For air-fryer cooking: Preheat the air-fryer to 350 °F (180 °C).
Coat the air fryer basket with cooking spray and add the doughnuts to the air fryer. Leave space between the doughnuts and coat them with melted butter or oil spray.
Air fry the doughnuts for 3 minutes, turn and cook for an additional 3 minutes, or until golden brown.
Place the doughnuts on a cooling rack.
If you prefer more traditional deep-frying: Preheat the fat or oil in the deep fryer to 350°F (180°C). Line a baking sheet with paper towels.
Place 3 or 4 doughnuts at a time in the hot vegetable fat, and cook for 2 to 3 minutes, or until golden brown, turning halfway through. Watch out for splatters. Drain on paper and leave to cool.
For finishing touches: using a pastry cutter, punch a hole in the side of the doughnuts to form a cavity inside.
Fill doughnuts with whipped cream. Sprinkle with powdered sugar if desired.
Tip: you can vary the pleasure by filling the doughnuts with chocolate spread, jam or custard.
Stuffed doughnuts are best eaten the same day. If you have any left over, cover them with a cloth until the next day.
