There’s nothing like an Asian-style chicken soup to warm you up during the winter!

Ingredients
- 1 chicken breast
- 1 tablespoon sunflower oil
- 1/2 cup Chinese rice wine (Shaoxing) (1.2 dl)
- 2 carrots, thinly sliced
- 3 stalks celery, cut into small pieces
- 2 tablespoons soy sauce
- 1 piece ginger, grated
- 2 garlic cloves, crushed
- 2 tablespoons lime juice
- 1 bok choy, cut into thin slices
- 7 oz dry vermicelli (200 g)
Instructions
Cut chicken breast into small pieces. Brown in oil in a saucepan.
Add rice wine, carrots and celery and cook for 2 minutes.
Pour in 6 cups (1.5 liters) of water. Add chicken broth, soy sauce and grated ginger.
Stir in pressed garlic and lime juice. Bring to the boil for 5 minutes.
Add bok choy and vermicelli. Cook for 5 minutes.
Serve immediately.
