It’s almost Easter and to enter spring, here’s a recipe for delicious lemon-flavored cookies, topped with a lemon glaze and glitter. Perfect to accompany Easter Sunday tea…

Yield: approx. 40 cookies
Ingredients
For the biscuits dough
- 1 cup + 1 tablespoon of butter, softened (250 g)
- 1 cup of granulated sugar (225 g)
- 3 eggs
- 1 pinch of salt
- 1 lemon
- 3 1/2 cups of all purpose flour (500 g)
For the glaze
- 1 cup of icing sugar (150 g)
- 3 tablespoons of lemon juice
Instructions
1. Mix the butter, sugar and salt in the mixer bowl.
2. Stir in eggs and mix until whitened.
3. Grate the zest of the lemon and add to the mass. Add the flour and stir. It is recommended to put the dough in the fridge for 2 hours.
4. Preheat the oven to 400° F (200° C).
5. Spread a portion of dough on the slightly floured worktop about 0.15 inch (4mm) thick. Cut out shapes with a Easter cookie cutter.
6. Place the biscuits on a tray lined with baking paper. Recover the drops and incorporate them into a new serving of dough.
7. Bake for 10 minutes.
8. Immediately prepare the frosting and spread with the brush on the biscuits as soon as they leave the oven.
Decorate with glitter of your choice!
