January 6th is Epiphany. A joyful moment to gather around the traditional king cake with its almonds and hidden bean. Who will be the king or queen of the day?

1. In a bowl, combine the flour, salt, sugar and yeast, making sure that the salt and yeast are not in direct contact. Add the butter and milk, then knead into a soft, smooth dough. Cover and let rise for about 1h30 at room temperature, until the dough doubles in volume.
2. Take 8 portions of dough of about 3 oz (90 g) each, form balls and place the almond (bean) in one of them.
3. With the rest of the dough, shape into a large ball and place it on a baking paper covered tray.
4. Spread the small balls all around.
5. Cover and let rise a second time for about 30 minutes.
6. Preheat the oven to 350° F (180° C).
7. Brush with egg yolk, sprinkle with sliced almonds and pearl sugar or chocolate sprinkles.
8. Bake for about 30 minutes. Remove the brioche from the oven, let it cool down, then slide it on a rack and let it cool completely.
