On the occasion of Chinese New Year, which will take place on February 12th, here is a recipe for tofu with “General Tao” sauce. This syrupy sauce, of Szechuan origin, made from ketchup in particular, is usually served with chicken. Since it is so delicious, it sublimates here tofu cubes.

Prepare the sauce: in a bowl, mix all the ingredients with a whisk. Set aside.
Prepare the tofu: in a large bowl, mix the tofu with the cornstarch. Shake to remove excess. Set aside on a plate.
Heat the oil in a wok. Fry half of the tofu at a time until lightly browned. Set aside on a paper towel-lined plate. Do the same with the second half.
In the same wok, soften the green onions, ginger and garlic for 1 to 2 minutes. Add the sauce and bring to a boil while stirring. Add the tofu and continue cooking for 2 minutes, stirring well to coat the cubes with the sauce.
Serve with the cereal of your choice: rice, quinoa, etc.
The plus: the crispness of the tofu cubes and the flavor of the sauce!
