Ingredients
- 2 pounds boneless skinless chicken thighs, cut in thin slices
- 1/2 cup of canned pineapple juice
- 1/3 cup of olive oil
- 1/4 cup of light brown sugar
- 1/4 cup of reduced sodium soy sauce
- 1/4 cup of ketchup
- 1 teaspoon of ginger
- 1 teaspoon of onion powder
- 1 teaspoon of garlic powder
- 1 teaspoon of paprika
- 1 teaspoon of salt
Instructions
Whisk all the ingredients together in a large freezer bag or bowl. Add chicken slices, remove excess air, seal and turn to coat. Marinate 4-24 hours.
Fry the pineapple chunks in a frying pan and sprinkle with cane sugar to caramelize them, a few minutes on each side.
Place the pineapple pieces on a plate, then cook the chicken with the marinade for 10 minutes.
Serve with rice and the caramelized pineapple chunks.
