Prep: Preheat your oven to 480°F (250°C).
Whisk: Crack the eggs into a large bowl and add the 200g of sugar. Beat with a hand mixer or stand mixer on high speed for 5 to 6 minutes until pale and voluminous.
Dry Ingredients: Weigh the flour and mix it with 2 teaspoons of baking powder. Set aside.
Aromatics: Wash the lemon, then grate the zest. Squeeze the juice.
Mix Liquids: Add the oil, lemon juice, and zest to the egg mixture.
Combine: Turn your mixer to the lowest speed and very slowly add the flour and baking powder mixture until just combined.
Fill: Place paper liners into a muffin tin. Fill the liners using a tablespoon or a piping bag. Fill them nearly to the brim if you want very large “muffin tops.”
Topping: Generously sprinkle the top of each muffin with granulated sugar.
Baking:
First 5 minutes: Bake at 480°F (250°C).
Next 5 minutes: Lower the heat to 430°F (220°C).
Final 5 minutes: Lower the heat to 350°F (180°C).
Allow the lemon muffins to cool slightly before serving.
