For the pastry cream
For the almond cream
To make the pastry cream: boil the milk with the vanilla beans. In a bowl, whisk together the sugar and egg yolks. Add the flour and cornflour. Pour the milk over the mixture and heat until the cream thickens. Strain on contact and set aside.
To make the almond cream: Mix the butter, powdered sugar, almond powder, cornflour, egg yolks, honey, rum and lime zest with a mixer.
Mix the almond cream with the pastry cream.
Preheat oven to 350°F (180°C).
Roll out the puff pastry and cut out 2 circles of about 9.5 inches (24 cm).
Place the first circle in the bottom of a baking tray lined with baking paper. Pour in the cream, taking care to leave a 0.8 inch (2 cm) border without cream.
Lightly moisten the edges with a little water.
Place 1 bean (here 1 almond).
Place the second pastry circle on top and seal the edges of the two doughs together.
Brush the pie with egg yolk so that it is golden brown after baking.
Bake for 30 minutes.
