This year, to celebrate Fat Tuesday, I suggest you make what we call “Merveilles”. These are delicate French pastries, usually fried, that are eaten faster than they are made!

Rest Time: 30 minutes
Cooking Time: 1 minute on each side
Difficulty: easy
Yield : 16 pieces
In the bowl of a food processor, mix the flour with the salt. Beat the eggs and the sour cream, add the flour mixture and mix until you obtain a soft dough.
Cover the dough and let it rest at room temperature for about 30 minutes.
Divide the dough into 16 pieces. Roll each one out as thinly as possible on a little flour to form disks.
Flour your hands, then gently stretch the dough from the middle until it is translucent. The reserved pieces of dough should remain covered to prevent them from drying out. Proceed in the same way with the other dough pieces.
Fill a casserole dish with oil to 1/3 of its height and heat to 320-340°F (160-170°C). Dip a merveille into the pan, sear it quickly and gently with two wooden spoons and fry it for about 1 minute on each side.
Once cooked, let drain on paper towels.
Sprinkle with powdered sugar and serve immediately.
