This recipe is just a pure delight! A gourmet shortbread dough, a tangy lemon curd (but just the right amount) and icing sugar to top it all off!

For: a pie mold of 11 inches (28 cm) of diameter
For the dough:

In the food processor bowl, blend all the ingredients until a homogeneous dough is obtained.
Spread with your fingers in the lined pan.
Preheat the oven to 350°F (180°C).
Bake for 15 minutes, until the dough is slightly golden.
Meanwhile, prepare the lemon cream: whisk the eggs, sugar and flour until smooth and homogeneous.
Add the lemon juice and the milk.
Take the dough out of the oven and immediately pour this filling over it.
Lower the oven temperature to 320°F (160°C) and bake for 18 minutes.
Allow to cool for a few minutes before unmoulding, then allow to cool completely.
Cut out 2 inches (5 cm) squares and sprinkle with icing sugar.
