Boo! These Ghost Linzer Cookies are here to haunt your dessert table, in the cutest way possible, of course. Delicate cookies sandwich a layer of gooey raspberry jam that oozes just enough to look delightfully eerie (but taste heavenly).
Think of them as the Casper of cookies: spooky on the outside, sweet and jammy on the inside. Perfect for Halloween parties or late-night “taste testing” sessions when the spirits—uh, sugar cravings—come knocking.
Just be warned: once you dust them with powdered sugar, they might disappear faster than a ghost at sunrise.

Baking Time: 12 min at 350 °F (180 °C)

Yield: about 50 ghosts
Mix dry ingredients in a large bowl: flour, almond flour, and salt.
In your stand or hand mixer, combine room temperature butter and sugar and beat on high speed until mixture is light and fluffy about 2 minutes. Add the vanilla extract, egg, and lemon zest and continue to mix for another 30 seconds. Be sure to scrap the bowl so everything gets incorporated.
Add dry ingredients to wet and mix on low speed. Scrap the bowl as necessary.
Wrap the dough tightly with plastic wrap and chill for 30-60 minutes.
Preheat oven to 350 °F (180 °C).
Remove the dough from the refrigerator, and let it soften for 5 to 10 minutes so you can easily work with it. Roll the disc of dough between two sheets of parchment paper to about 1/4 inch thick. Cut out ghosts using heart cookie cutter.
Cut each heart in the middle.
For the mouth and eyes use a small round piping tip or straw to create the holes.
Transfer to a parchment or silicone lined baking sheet.
Gather the remaining dough, roll, and repeat. If at any time during this process the dough becomes sticky and hard to work with, simply refrigerate it for about 20 minutes until firm.
Bake at 350 °F (180 °C) for 10-12 minutes or until edges are golden brown.
Let cookies cool completely.
Dust the ghosts with the faces with a generous amount of powdered sugar.
For the full ghosts add around 1/2 tbs of jam on the center.
Sandwich the two together and enjoy!
