Here is a nice and gourmet appetizer at the same time, which could start your Christmas menu in style!

Baking Time: 20 minutes at 265° F (130° C)

Yield: 4 persons
Ingredients
- 4 big onions, cut in small pieces
- 2 egg yolks
- 1/3 cup + 2 tablespoons of milk (1 dl)
- 1/3 cup + 2 tablespoons of crème fraîche (1 dl)
- 8 tablespoons of shredded Parmesan
- 4 teaspoons of brown sugar
- butter
- 1 teaspoon of cumin
- 1 teaspoon of turmeric
- salt-pepper
Instructions
1. Brown the onions over low heat with a little butter and two teaspoons of brown sugar.
2. Preheat the oven to 265° F (130° C).
3. In a blender, combine the egg yolks, milk, cream, spices, and a pinch of salt and pepper.
4. Remove the onions from the heat once they are golden brown and pour 2/3 of the mixture into the blender, adding 4 tbsp. of Parmesan cheese. Mix it all together.
5. With the remaining third of onions, fill the bottom of the ramekins.
6. Add the mixture on top.
7. Bake for about 20 minutes and let cool down.
8. Just before serving, sprinkle the remaining Parmesan and brown sugar on top.
9. Pass the whole thing under the torch.
