This is a quick and easy recipe to make. The result? Incredibly smooth madeleines, because the dough has rested overnight in the fridge!

Yield: 30 madeleines
In a saucepan, heat milk and honey to 140°F (60°C).
In a bowl, beat the eggs with the sugar, then drizzle in the milk and honey.
Then pour in the sifted flour with the yeast.
Melt the butter and zest the lemon and orange.
Stir in very hot melted butter and orange and lemon zest.
Mix the dough well, then put it in the fridge overnight.
The next day, preheat the oven to 430°F (220°C).
Stir the dough and spread it in a buttered madeleine tray.
Bake for 5 minutes, then reduce oven temperature to 350°F (180°C) and continue baking for 10 minutes.
Enjoy the madeleines as soon as they come out of the oven or once they are cooled!
