Palets bretons are butter biscuits and are THE ideal speciality for an afternoon snack or to enjoy with a coffee. They are also known as Traou-Mad (which means “good things” in Breton).
Golden and thick, these biscuits are appreciated for their generosity and their crunch. And they are easy to make, so put your aprons on!

Bake Time: 30 minutes at 350°F (180°C)

Yield: 12 palets bretons
In the bowl of a food processor, whisk the egg yolks and sugar until pale.
Add the soft butter and whizz briskly for a few minutes.
Then add the flour, salt and baking powder and process for a few minutes until smooth.
Pour the dough onto cling film and roll into a circular sausage. Store in a cool place for 1 hour.
Preheat oven to 350°F (180°C).
Butter a muffin tin. The mold will allow the palets to bake while maintaining a round shape.
Cut slices about 0.8 inch (2 cm) wide.
Divide the slices among the muffin cavities.
Bake 25 minutes.
Carefully invert the palets onto a baking sheet lined with baking paper. Continue baking for a further 5 minutes to brown.
