This recipe is the best lemon soaked cake recipe I have ever made, tested, approved and loved.
Prep Time: approx. 20 minutes
Rest Time: 30 minutes
Baking Time: approx. 60 minutes at 305° F
Difficulty: easy
For: a rectangular baking pan of approx. 8.6 inches
For the cake
1. In a medium bowl, put the sugar and then grate the zest of both lemons. Stir together with your fingers until it’s well mixed. Set aside for 30 minutes.
2. In a saucepan, melt the butter.
3. Preheat the oven to 305° F.
4. In a large bowl, put the melted butter and the sugar-lemon zest mixture. Beat together vigorously.
5. Add the eggs and beat again.
6. Add the whipped cream, the salt and the lemon juice and beat together until well combined and smooth.
7. In a separate bowl, mix the flour with the baking powder. Then add that to the previous mixture.
8. Pour the mixture into the prepared pan.
9. Bake the cake about 60 minutes and check with a toothpick.
For the syrup
10. In a saucepan, whisk all ingredients and bring to the boil. Set aside.
11. As soon as the cake is baked, remove it from the pan. Use a pastry brush and soak the cake with the syrup.
