A festive starter! Although the vast majority of cheesecake recipes are sweet, why not try a savoury version?
This recipe consists of a base of rusks, covered with a creamy mass and decorated with rose-shaped strips of smoked salmon.

Ingredients
- 7 oz smoked salmon (200 g)
- 8 rusks
- 1/4 cup melted butter (60 g)
- ½ shallot, finely chopped
- Salt, Pepper
- Chives, Capres
- 1/2 cup mascarpone (100 g)
- 2/5 cup cream cheese (100 g)
- 1/2 cup plain yogurt (120 g)
- 1 tsp olive oil
Instructions
Crush the rusks, add melted butter, and mix very well.
Place in the bottom of a circular mould. Press well.
Mix cream cheese, mascarpone, plain yogurt, shallot, chives, and olive oil in a bowl and spread on the crushed rusks. Put in the fridge overnight.
The next day, carefully unmould.
Cut the smoked salmon into thin strips and roll each one tightly into a rose shape. For larger roses, simply add more strips of salmon around each other.
Place a rose on each cheesecake.
Garnish with capers or snipped chives.
