These are delicious, fluffy lemon cakes for a snack or tea party!

Ingredients
- 4 eggs
- 1/3 cup butter (80 g)
- 1/2 cup + 1 tablespoon sugar (130 g)
- 3/4 cup + 1 tablespoon all-purpose flour (120 g)
- 1 lemon
- 1 teaspoon of baking powder
- icing sugar (optional)
Instructions
Preheat the oven to 350°F (180°C). Separate the whites from the yolks.
Melt the butter and set aside.
In a food processor, beat the yolks with the sugar until they turn white.
Add the lemon zest and juice (about 70 ml), then the butter and mix to a smooth mass.
In a bowl, combine the flour and baking powder, then add to the previous mixture and mix.
Beat the egg whites with a pinch of salt, then gently fold them into the previous mixture.
Pour the mixture into small moulds and bake for 15 minutes at 350°F (180°C).
Wait a few minutes before unmoulding.
Sprinkle with icing sugar.
