After having proposed a recipe for a raspberry financier, here is a variation with strawberries!

Baking Time: 20 minutes at 350°F (180°C)

For: a 9-inch silicone pie mold (24 cm)
Ingredients
- 6 egg whites
- 3/4 cup + 3 tbsp. butter (200 g)
- 1 1/4 cup + 1 tbsp. powdered sugar (200 g)
- 3/4 cup almond powder (80 g)
- 1/2 cup + 1 tbsp. all-purpose flour (80 g)
- 9 oz strawberries, sliced (250 g)
Instructions
1. Preheat oven to 350°F (180°C).
2. In a wide-bottomed saucepan, melt the butter over medium heat. It will turn a nice nutty color.
3. In the bowl of a food processor, froth the egg whites. Then add the powdered sugar and mix gently.
4. Stir in flour and almond powder and mix very gently with a spatula.
5. Add the butter while still warm, filtering it, and mix with a spatula until you obtain a very homogeneous preparation.
6. Gently add the strawberry slices.
7. Spread in the mold.
8. Bake at 350°F (180°C) for 15 minutes.
