These patties are made from ground tofu. Spiced with peas, they are perfect served with a delicious salad.

Ingredients
- 1 small onion, quartered
- 1 garlic clove, halved
- ¾ lb firm tofu, cut into large cubes (340 g)
- 1 ½ cups frozen peas, thawed (225 g)
- 2 eggs, lightly beaten
- ¼ cup flour (40 g)
- ¼ cup breadcrumbs (30 g)
- 1 teaspoon salt
- ½ tsp. dried thyme
- ½ tsp. dried tarragon
- 3 tbsp. olive oil
Instructions
In food processor, finely chop onion and garlic. Add tofu. Chop a few seconds at a time, until the mixture just forms a sticky paste.
Add half the peas, eggs, flour, breadcrumbs, salt and spices. Chop for a few seconds.
Transfer to a bowl and add the other half of the peas. Mix gently.
Heat olive oil in a large non-stick frying pan over medium-high heat. Drop in the equivalent of one tablespoon of mixture.
Cook patties for 5 minutes on each side, or until golden brown and forming a light crust.
Lightly press the patties after turning them over to give them a real patty shape.
Serve tofu patties with a green salad, if desired.
