A focaccia recipe that differs from the plain version. This recipe combines three Italian ingredients that always form a most successful combination: tomatoes, basil and mozzarella.
Prep Time: 10 minutes
Rest Time: 1h30 for letting the dough double in size
Baking Time: 20 minutes at 400°F (200°C)

For the filling
1. Place all the dough ingredients in the food processor and mix for 10 minutes. Then form a ball and leave to rest, covered, for 1 hour.
2. Gently place the ball of dough on the worktop and roll it out with a roller without pressing, just enough to spread it out a little.
3. Gently place the dough on a baking sheet.
4. Make holes with your fingertips and spread a little olive oil in them. Leave to rest for about 30 minutes.
5. Preheat oven to 400° (200°).
6. After the resting time, sprinkle some salt. Cut the cherry tomatoes in half or in several slices and arrange them on the focaccia.
7. Arrange as many small pieces of mozzarella as desired.
9. Bake for about 20 minutes.
10. Cut into pieces just before serving, otherwise the focaccia will dry out.
