Here’s an original way to eat vegetables: in patties, with a delicious yogurt sauce. A simple and healthy meal!

Ingredients
- 21 oz of potatoes, peeled (600 g)
- 7 oz of carrots and as much zucchini, grated (200 g)
- 3 eggs
- 5 tablespoons of all-purpose flour
- 1 teaspoon of salt and pepper
- 1 tablespoon of butter
- 8.8 oz of plain yogurt (250 g)
- 3 tablespoons of chopped herbs (e.g. chives or parsley – optional)
Instructions
Grate potatoes, carrots and zucchini.
Remove excess water with paper towels.
Mix with eggs and flour, add salt and pepper.
Heat the butter in a frying pan and form patties with the mass.
Cook for 15 minutes on each side over medium heat.
In a bowl, add salt and pepper to the yogurt and add herbs if desired. Serve with the patties.
