Ingredients
- 1/2 cup of rice
- 2 zucchinis
- 1 cup of all-purpose flour
- 2 teaspoons of baking powder
- 3/4 cupof milk
- 1 egg
- 1/4 cup of Parmesan
- ground basil
Instructions
1. Cook the rice.
2. Wash the zucchinis. Shred one third of it, and cut the remaining 2/3 in slices.
3. In a medium bowl, mix the flour and the baking powder.
4. In another bowl, whisk the milk, the egg and the Parmesan.
5. Add the flour-baking powder and barely mix, no need to exaggerate.
6. Add the shredded zucchinis, the basil and the rice.
8. In a frying pan, put 2 tablespoons of oil and begin to heat. Put 1 tablespoon of the batter into the pan, and put 3-4 slices of zucchinis over it. .
9. Cook for a few minutes and turn the pancakes to cook them on both sides.
